Help, trying to make Ice Cream?
My Mum got a recipe from the TV for coconut ice cream, but then she discovered the chef expects you to have an ice cream maker, which we don't.
It says, "...mix all the ingredients together in a bowl, put it all in an ice-cream maker and churn. Then put it all in the freezer to set."
So what can she do? She has an old Philips food mixer which simply uses a large, open plastic bowl on a turntable, which is operated by 1 or 2 electric whisks.
P.S. I'll e-mail a spoonful down to the best answer, LOL!
The main purpose of the ice cream maker, apart from convenience, is (a) to churn the ice cream and (b) to freeze it. It's (a) that is the important bit, Churning gets rid of the ice crystals that form in the ice cream mixture. If you leave them there the ice cream will not be smooth, it will be lumpy and rough.
So if you mix the ingredients together in the Phillips, two whisks, moderately slowly until you have a mixture the consistency of melted ice cream, then pour this into a plastic tub with a lid and put it in the freezer. Before it sets firm, put it back in the Phillips and whisk the mix (you will see the ice crystals) until they disappear. Back in the tub and freezer. You must repeat this two or three more times and you can then leave it to freeze.
Sound like hard work? It is a bit, but the ice cream you get back will be well worth the effort.
I am now sitting here with my empty ice cream cone and I want more that a spoonful!
