Is it possible to get "amazing" photos from a fully automatic point-and-shoot?
I ask this because I was looking into purchasing a Canon Powershot SX120, which lets you change the aperture and shutter speed manually. However, my sister wants a more "stylish" camera, which made me look at the Canon Powershot SD1300. Unfortunately, you can't change aperture and shutter speed with it. Can you still get great results with it (or at least close to great)?

You can get incredible images with any type of camera, from the lowest P&S to the best DSLR. The main things to follow are lighting and composition.
The big difference is end use. If you want to put the shots online, or print 4x6 photos, the P&S are good, if your goal is to print large size prints, then you need a DSLR. The sensor size on most P&S cameras is incredibly small, so enlargements are not as good.
Being able to change aperture and shutter speed help, but even without being able to change those directly, most cameras will have an exposure compensation, that allows you to make changes to exposure. While not being able to change shutter and aperture directly, you can vary shutter speed and aperture through the use of the icon dial, landscape, portrait, sports, etc.
