Why is my distilled water coming out acidic?
Water comes from a water tower, through a deioniser and into the still. We noticed the product was coming out at pH 5.
We've changed the cartridge in the deioniser, and (after taking it apart) descaled the inside of the still with 10% formic acid. Then rinsed thoroughly before re-assembly.
We then ran the still as normal for a few days (switched on at 8:30am, and back off at 4:30pm), and found the water was still acidic.
I then put a small amount of bicarbonate of soda into the still to try to mop up any free acid before starting again.
The water going into the still (out of the deioniser) is neutral pH, so I don't think it's anything to do with the source water (unless perhaps the hardness has some effect? - we are in a very hard water area).
All pH measurements were made with universal indicator solution.

2. What can I do about it?
The water from the various stills we had at School was always noticeably acidic, which I always believed to be due to dissolved CO2. It never had any adverse effects on any experiments we used it for (except making up sodium thiosulphate solutions; which would rapidly go cloudy with precipitated sulphur): so I wouldn't worry if I were you.
In fact we used less and less distilled water for preparing solutions and found tap-water was fine for the majority of lab. solutions. Coming from a hard water area we didn't use it for solutions of salts with insoluble carbonates or for silver nitrate, but always used it for 'bench' acids and plenty of other 'everyday' solutions.
(If you want to test the pH of salts, though, and have sodium chloride come out around 7, then I'd use tap water for the experiment rather than distilled!!)
